Beyond Rabarbergaarden

Rabarbergaarden is an organic and holistic farm, with agriculture, market garden, farm restaurant, farmshop, organic nursery, school gardens and education. The farm is owned by Louise and Thomas Køster and is run in collaboration with persistent, qualified and dedicated employees.We work for a world where food production is in balance with the earth and nature. We work for small scale farmers' opportunities to feed their community, create local jobs and through that make sustainable and vibrant communities throughout Denmark.

MISSION

We work to enhance a world where what we produce is made in balance with the earth and nature. We work for small-scale farmers’ opportunities to feed their communities, create local jobs and through that create sustainable and vibrant villages and communities throughout Denmark.

Every day we make every effort to produce the best vegetables, breed the best meat and land the best fish without over-consuming the world’s resources. Natural, organic and with the best quality as a mark.

We always give back what we have taken from the land. We therefore return natural energy and nourishment to the soil, to maintain the soil’s balance and fertility.

The purpose of our work is to serve a meal that tastes of the nature we are surrounded by and the craftmanship we pay tribute. Being able to communicate our work and inspire others to cultivate the land with respect, is a daily aim.

Self-sufficiency

The goal is to be self-sufficient with feed for the farm animals, produce for the restaurant’s kitchen and the farmshop. The goal is also to ensure a sustainable production and economy in the company.

Holism

Through a no-waste system, all parts of the farm’s production are seen as resources that can be an asset in the farm’s operations. Everything from residues from the market garden that turns into animal feed or compost, to coffee grounds from the espresso machine that can act as soil improvement.

Workplace

Small farming is labour-consuming and therefore small sustainable farming often creates more jobs than large automated farms.

In the kitchen, restaurant and farmshop we honour the professional skills and sublime service. That’s why employees working with us gain a 360-degree knowledge of the entire chain of farm-to-table.

We honour to the work of the hand when it makes good sense. We  creat jobs in horticulture, farmin, cuisine and shop and front of house service.

Our hope

Our hope is that we can enchant the people who visit us and give them a unique experience. By showing what an authentic agriculture has to offer, we hope to be able to inspire others, maybe to live out the dream of becomming a small scale farmer and join in at the work of giving breath and life back to the small farms and communities through out the world.

Schoolgardens

From soil to food

Eight year in a row

During the spring and until the end of the autumn, Rabarbergaarden for is the 8th consecutive year hosting the culinary schoolgardens HAVER TIL MAVER in the muicipality of Gribskov. Gribskov Municipality has prioritized outdoor education in the municipality’s budget, and therefore it is free to register as an elementary school or kindergarten withn in the county.

PURPOSE

The purpose of the the culinary schoolgarden Haver for Maver is to create a learning space where children and young people strengthen their familiarity with and understanding of the food’s path from soil to table. Their understanding and recpet of nature, eco-systems and of a sustanable foodsystem and healthy living. We want to help the children to reconnect with the soil and land, and give them an understanding of their own impact on and importance for the interaction between growing food, cooking and the nature aoround them.

Organic Area Grant

The farm has received Organic Area Grants to redevelop and farm the farm’s agricultural land organically. The purpose of the grant is to increase the organic area in Denmark and thereby achieve a number of benefits for the environment and biodiversity. The grant has meant that the farm has been able to maintain an organic production on the farm’s agricultural land and sell organically produced food.
