15 years ago, we transformed Rabarbergaarden into a sustainable and organic farm. We started out hay for the animals and then with the construction of our 10,000 m2 large Market Garden. We are one hundred percent dedicated in our work to grow, produce and prepare high quality seasonal and organic meals. Rabarbergaarden is one of the first and only farm restaurants in Denmark, and we are almost completely self-sufficient with produce and meat.
We strive for more and want to develop our gastronomic line futher, but still based on what we produce at the farm. To be part of that development, we are looking for a dedicated Sous chef for the kitchen.
- As a sous chef, we expect that:
You are a natural leader who, together with the culinary chef, will safely and clearly lead the kitchen team. - You will be responsible for the day-to-day organization of the work in a kitchen that delivers the best gastronomic output every day.
- You have experience working in a creative kitchen and kow how to use the latest techniques.
- You are ’fluent’ in ordering from our suppliers as well as being the critical recipient, so that only the best reaches the kitchen.
- Your passion and interest in the high gastronomic universe will be pure inspiration for your team.
- You have a heartfelt interest, courage and desire to work with the tension that lies within, primarily to prepare seasonal menus based on the ingredients that grow right outside the kitchen door.
- You see the daily dialogue and collaboration between the kitchen and garden team as a strength that is essential for the kitchen team to perform it’s best.
- You are present and know that a sublime service only succeeds when it’s done as a sorking team.
- You are robust, ready to lead and motivate even when the work days are long.
- You speak English fluently, Danish, Frensh and Spanish will appreciated.

We want to help ensure the sustainable gastronomes of the future and therefore we give high priority to the education of students. At Rabarbergaarden you get an extra dimension in your education, as we have attached a special module called: Market Garden & animal production. This means that in addition to your study-described curriculum, you will also receive instruction in the production of the produced you have to work with in the kitchen.
Right now we are looking for two chef students. One in a short term posistion and one who would like to complete the education at Rabarbergaarden.
As a chef apprentice we expect:
- You have completed the basic course at a recognized gastronomy school or equivilant.
- You, are looking for place where you can complete your education and has at least one previous internship period at an a la carte restaurant.
- You are passionate about learning about the soil-to-table principles and using them in the kitchen.
- You have the ambition to become a very skilled gastronomist with a sustainable profile.
- You are innovative and want to train new ideas.
- You are resilient and ready to take on daily tasks with the rest of the team.
- You are a good colleague and willing to pitch in, are flexible also when you are asked to change shifts.
- You speaks at least English and preferably Danish.
- After the trial priode, you want to learn even more about sustainable quality gastronomy at Rabarbergaarden.

Rabarbergaarden is one of the first and only farm restaurants in Denmark, and we are almost completely self-sufficient with produce and meat.
Everything at the farm is seen as a ressource. All vegetables that are not suitiable for the restaurant or farmshop products will feed the animals or be recycled into the composte.
We run the school garden HAVER TO MAVER (From garden to stomach) for the Municipality of Gribskov. Here we teach 3rd graders form the local public schools how to work the soil, grow their own food, how to cook with vegetables and how w eshould treat our land and nature. We seek to reconnect the chrildren to the soil and the nature.
We disseminate knowledge to our many guests and customers, both on a daily basis but also through organized worksshops and events.
We grow according to the No Dig method and are inspired by the no dig/no till system. After five years we have achieved a soil culture and a working method that gives us a high yield. By 2020, we want to increase our production.
Our primary customer is Rabarbergaardens Farm Restaurant and the kitchen, which is why there is a close cooperation and daily dialogue between the garden and the kitchen team. In the 2020 season, we will launch a Summer CSA (Community Supported Agriculture) that targets the many summer and holiday guests we have in the area.
In the new season we will also launch RabarbergaardensOrganic Nursery, which will offer seeds, small plants, good gardening tips and advice and workshops for private garden owners.
For our continued work to help lift new initiatives, we are looking for a gardener who has the energy and desire to be a leading part of Rabarbergaarden’s Market Garden and Nursery.
We expect that:
- You are a trained gardener or equilivant. Has min. 3 years of experience as a production and outdoor gardener, preferably with organic gardening.
- You have the knowledge and desire to work with the No Dig method.
- You can plan and follow production plans for the season.
- You can organize team schedules.
- You can lead a dedicated and international garden team.
- You can and want to take the teaching of cultivation, growing vegetables and understanding the soil in the school gardens.
- You are robust, ready to lead and motivate your team.
- You speak Danish and English.
- You are creative and want to help develop Rabarbergaarden’s methods in organic and sustainable production of vegetables, fruits, berries, trees and flowers.
- You want to be a part of Rabarbergaarden for a longer periode and take part in the future development of the farm’s universe.
